Verley (formerly Bon Vivant) is a French food-tech company producing high-performance dairy proteins without cows. Using precision fermentation, Verley makes beta-lactoglobulin (BLG), the key whey protein, by engineering microbial strains and optimizing fermentation bioprocesses with computational and AI-driven tools. The resulting protein matches the nutritional and functional performance of conventional whey while avoiding animal agriculture, offering food and nutrition brands a sustainable, allergen-controllable ingredient. Verley is one of only a handful of companies commercializing BLG via fermentation and is preparing to enter the US market. Founded in late 2021, the company raised an oversubscribed $38 million Series A led by Alven in 2025, with participation from Blast, Bpifrance, Sofinnova, and others.
